I am a pretty lazy cook, that's why I meal prep on Sundays and typically do not bake. However, I do have a sweet tooth! I mean, who doesn't like dessert?!
As a typical girl I troll Pinterest daily for things, and awhile back I found a recipe for these. I have modified it a bit since I do not like coconut. These little bites are amazing and I am going to have to try and make them different ways. I might add banana or hemp seeds/chia seeds in the future.
1 and ½ cups old-fashioned oats
½ cup ground flaxseed
¼ cup mini chocolate chips
½ cup smooth peanut butter
⅓ cup honey
½ tsp almond or vanilla extract (I use vanilla)
Place all ingredients in a large mixing bowl. Stir to combine.
Scoop the mixture with a small cookie scoop.-I just use my hands and create little balls
Place on a parchment paper baking sheet.
Chill in the fridge until set, about 1 hour.
Store in a closed container in the fridge.
