Broccoli Casserole

How many of you associate the holidays with a certain dish? I am very connected to certain foods, especially around the holidays. I think mostly for 2 reasons; I only eat them around the holidays so I really look forward to them. Secondly, now that my mom is no longer here and she made them the best, it really becomes symbolic.
One of my favorite dishes is her broccoli casserole. For years, I tried to recreate it, because of course she never wrote it down or told anyone how to make it. Last year I finally figured it out, the missing ingredient was butter!! Butter! Ah!
Here is how you make it so you can enjoy it!
Ingredients:
9x9 casserole dish is what I used.
-2 heads of broccoli
-4 carrots chopped (or if you are feeling pressed for time, a can of sliced carrots works too)
-1/2 an onion (optional)
-1 cup if milk ( I used 1%)
- 1.5 cups of Sharp Cheddar
- 3 tbsp of butter (unsalted)
1. pre heat oven to 400F
2. If you are using fresh carrots, I would pre steam them so they aren't too hard
3. chop up broccoli and dice onion
4. place all veggies in the casserole dish and set aside
Sauce:
1. Heat 1 cup milk over medium heat
2. add in the butter and mix it in until melted
3. Slowly begin adding in your cheese, keep stirring. It should start to turn creamy.
4. Mix until all cheese is melted, about 2-3 mins
5. Pour all cheese sauce evenly over the veggies.
6. place the casserole into the oven (uncovered) and cook for 15-20 mins
7. turn the broiler on and let cook for about 3-5 more mins, keep an eye on it so that it doesn't burn, it should have a nice brown on the top!
take it out, let it cool for 5 mins and ENJOY!
