Meal Prep and Kale University


Another Sunday, another meal prep session! I was feeling crazy today so there is a lot more variety than previous weeks. There is still Mexican because let's be serious, I can't live without it! One thing that I did pick up this week is kale. I LOVE KALE. LOVE LOVE LOVE KALE! I am even the proud owner of a Kale sweatshirt...you get the point.

How do to cook kale so it doesn't taste like a bush:

-wash the kale and set aside

-Chop up about 1/4 red onion

-Chop up 2-3 garlic cloves

-Saute' the garlic and onions in about 2tbsp of olive oil

-Add the kale

-pour over about 3/4 -1 cup of chicken broth

-Cover and cook over medium heat for about 5 minutes

You will notice that it has cooked down and you can begin adding salt, pepper and whatever other spices you desire. Cook until it is tender and boom, amazing kale!

-Brined chicken, kale and mini potatoes

-Chicken, mix vegetables, rice and Indian sauce

-Chicken, broccoli and rice

-Chicken, ravioli and broccoli
